Interstellar BBQ in Austin lives up to the hype. I was skeptical because there are so many BBQ places around Austin and so many of them have great reviews. But they can’t all be amazing, can they?
We arrived when they opened, naively thinking that during the week the line wouldn’t be too bad. We were wrong. We waited in line for about an hour before we ordered. It was cool to see the smokers outside - sitting in the parking lot - while you waited to order. I did get a little nervous about not being able to find a table once we actually got our food, but it was not an issue. The benefit of the line being so long is that the tables clear out just enough for the new customers to sit down.
Once you get past the wait, the food is absolutely out of this world. They have a good variety of meats and sandwiches to try. Since this was our first time visiting, we decided to try:
Tipsy turkey
Brisket
Pork spare ribs
Mac & gouda cheese
Smoke scallop potatoes
New potato salad
It was all delicious. The turkey was moist, in a good way, with a delicious blend of herbs and spices. The pork spare ribs were sweet, with a little heat (as they describe it) and fell completely off the bone. The brisket was amazing. The best brisket I’ve tried yet in Texas. The flavor was great, and it had just enough fat to make it melt in your mouth. All of the sides were delicious, too. My favorite was the mac & gouda cheese. It was a grown-up mac and cheese that I will probably crave now every time we make mac and cheese at home.
Interstellar BBQ is in north Austin. They are open Wednesday - Sunday from 11 a.m. until 4 p.m. or sold out. I would hate to be waiting in line at the end of the day to find out they sold out just before you got a chance to order. I recommend getting there with plenty of time for waiting and just enjoy the smell of the BBQ smoking in the parking lot.
